You love politics. You know it could be cleaned up. All you have to do is show up in Washington, and fix the darn place right? But then you get here, and the compromises begin.
We all love pizza. You know what goes into a good one. All you have to do is get some dough, put your favorite toppings, but the real compromises begins as to what ratio of peporoni to cheese or olives or pineapple. As a DC Transplant quickly learns, it’s about showing up and this weekend is no joke with the Super Bowl!
And unlike with your political compromises, this one will never mar your conscience, or your reputation. Don’t like mushrooms? Use zucchini (or similar) instead. Use mango Andouille sausage (you might get laughed at, but that’s ok). Add more cheese. Add garlic. Go meatless. Just don’t add tofu. Some compromises really are un-redeemable.
Super Bowl Pizza Casserole
- 1 lb bow tie pasta
- 1 26-oz bottle of your favorite spaghetti sauce
- 1TAB olive oil
- 2 large shallots, chopped
- ½ lb chopped mushrooms
- 3 chopped Serrano peppers
- 1 lb chorizo (or your favorite sausage meat)
- 2 tsp dried oregano
- 1 lb shredded cheese (I like a mozzarella/cheddar mix)
- 10 TAB grated parmesan
- 1/2 lb sliced pepperoni
Cook the pasta according to the box’s instructions – and better to under rather than overcook, since it will go into the oven later. But honestly, it will be tasty either way.
Sauté the shallot, mushrooms, and Serrano in olive oil, then add chorizo and oregano and cook until the meat is done.
Combine the cheeses.
Lightly coat the bottom of a 9”x13” pan with a few tablespoons of the tomato sauce. Here are your layers:
- 1/3 Pasta
- 1/3 sauce
- 1/2 chorizo mix
- 1/3 cheese
Repeat until done, or until you can’t fit any more in (your last layer should be cheese). Cover top with sliced pepperoni.
Bake at 375F for 40 minutes. Allow to set for a few minutes, then serve. Enjoy!
